Beet or Beetroot, when I say this word first thing you will pop your mind is the beautiful dark pink (magenta) color and those stains it leaves on your tongue, teeth and fingers after eating it. 
Generally this beet is used only in two ways either chopped and eaten as salad or the creative cooks would use it to make pink raita.
That is it.

but feel like eating them but in a cool and tasty way ? yes

Honestly there is no point in chopping veggies, making salads and forcefully eating them
Indian food culture celebrates food it is all about enjoy every morsel you put in your mouth. Food should be nourishing to your belly and your soul. And this is the right way to stay healthy and happy.

It is not necessary to consume veggies in salad form. You can create lovely tasty dishes and consume it any how.

So here I am sharing one of my way of using or eating beetroot. Which is called as ~
The great South Indian Beet and Banana Cutlet.

Here the great means - big jumbo size cutlets, south Indian because - bananas coconut and sambhar masala and Cutlet - healthy and tasty big bites

This one is a fusion recipe. As bananas and coconuts are consumed as staples in South India. 
I have combined them with beetroot or beet and made cutlet. And believe me this is one of the best ways to eat your beets.
Let me just begin with the recipe.


Ingredient List:-

Servers ~ 4 
Time ~ 1 hr 30 mins 
Course ~ Starter/ Breakfast 
Taste ~ Sweet cum Spicy

    • Beetroot ~ 4 big beets
    • Raw Banana ~ 4 (2 Ripe Bananas can be used)
    • Coconut ~ 2 cups
    • Sambhar Masala ~ Salt ~ Chili Powder ~ Sugar ~ Lemon juice, Cumin (Jeera) Powder ~ As per taste
    • Chopped Chilies ~ 2-3
    • Chopped Ginger ~ as per requirement
    • Rice or Corn Flour ~ 1 spoon
    • Oil ~ Shallow Fry cutlet

Methodology :-

Step 1 ~
Nicely wash your 4 big beets, chop of the ends peel the skin start grating in a bowl.

(Quick Fix ~ If you do not wish to grate here's another option ~ chop the beets into fine pieces through them into mixer blender for about exactly 1-2 minute. Note* do not make a fine paste and avoid putting water while mixing)

Step 2 ~ 
If you use  

4 Raw Banana for mild sweetness ~ Boil it for about 5-8 minutes, let it cool down and peel off its skin, mash it and mix with beet. 

OR

2 Ripe Banana for extra sweet taste ~ Just mash with beet. 

Step 3 ~ 
Add all dry ingredients
Add 1 cup grated fresh Coconut, 1 spoon Rice or Corn flour , Add Chopped Chillies and Ginger paste, Spices ~ Sambhar Masala ~ Salt ~ Chili Powder ~ Sugar ~ Lemon juice, Cumin (Jeera) Powder ~ Sugar As Per Taste into the Beet and Banana Mix. Mix everything together well and make a thick dough out of it. Make Sure cutlet dough is thick enough and not loose or moist.

Step 4 ~ 
Take one portion and make Big Size Cutlets.
There are two more options to cook the cutlet.

Deep Fry ~ In a deep pan heat oil it should be enough for cutlets to dip in, fry for about 5 mins. Till the cutlet is nicely crisp from outside.

OR

Shallow Fry ~ Heat a nonstick pan place the cutlets drizzle some nice amount of oil and cook both the sides for about 10-12 mins. This option is bit time consuming but definitely a healthier one.

Step 5 ~
Cook all other Beet Cutlets.
Garnish and serve hot with Coconut Chutney or Ketchup.

  • other veggies like carrots, potatoes, bottle gourd (dudhi/lauki) can be used in the recipe
