Cake fixing hacks

Baking a cake is such a therapy, when it comes out well and perfect it's heaven... but if  it goes wrong everything screws up and spoils the mood..

But, where there's a whisk, there's a way... ;-)

Today I am sharing some savage cake baking tips, quick fixes and lessons I learnt. Lets begin....!!!



CAKE BAKING ESSENTIALS AND FIXES (traditional sponge and not the biscuit powder cake)

1- Whip cream-


  • Blend whip cream over ice bed, or ice cubes. (8-10 mins blend is enough for 750 ml cream) 
  • Do not over blend whip cream, later it will start melting quickly.
  • Use a glass place piping bag fill the whip cream. Tip for making perfect piping bag.
  • Always use icing sugar (Powder sugar) for whip cream and cake base as well. 


2- Baking mistakes-




  • Big bubble at the center of your sponge, this is because of over beating cake batter. Avoid over beating do not make your batter too smooth.
  • Cracks on sponge- this happens because you have used old very old or expired or overused baking soda/powder.
  •  To avoid this use new banking soda/powder, maximum 3 months old baking soda/powder should be used. Also using liquid soda gives same results.
  • Avoid de-moulding base sponge when it's hot. Let it completely cool down before icing.
  • Less moist or less sweet- Use sugar syrup or cheery/orange syrup/juice to moist your base sponge before icing.
  • While icing a cake dip your icing knife into cold water for that perfect finish.

3- Heat- 

  • Pre heat your oven/otg/cooker for 10-15 mins.
  • If baking in oven know your oven/otg well because every oven/otg is different. Maybe your oven/otg may take more or less time so adjust accordingly.
  • Use butter paper as base or grease you tin well.

4- Quick Fix- 

It is important to follow a recipe thoroughly, because baking is all about right measurements. But don't worry if you don't get that perfect base right sometimes. You can fix it and here are some ideas.
  • If your base sponge is half cooked and you have demoulded before cooling, just scrap out cooked sponge and make chocolate balls. Same can be done for crumbly sponge.

  • CHOCOLATE BALLS OUT OF SPONGE CAKE SCRAP - 


  • Take those scrap in a bowl, add 2 spn of melted butter, add melted chocolate, add choco-chips/nuts/dates (khajur) start rolling them you can also dip into chocolate again its optional, then into balls put them in fridge for 10 mins and your spoiled cake sponge is fixed ;-)
  • If your base sponge has cracked into try to fix it using whip cream.
  • Or when life gives you cake crumbles make a quick mousse- ( crumble on a base top with icing cream or ice cream sprinkle choco chips and melted chocolate or sauce or nuts put in freezer for 10 mins it's reaady.

Cake Baking Basics-


  • Always go for ready to make cake mixes which are available in 500 grams and 1 kg qty at baking shops in both flavors vanilla and chocolate.
  • Some are already sweet so adjust putting powder sugar accordingly.
  • All you need to do is mix water into cake mix whisk for 1-2 mins put into greased cake tin and bake.
  • Always use stainless steal/aluminium (sliver shinny vessel), thick glass vessel, ceramic (MUGS) for baking in oven or cooker.
  • While baking in cooker or kadhai use sand or salt as base heat it for 10-15 mins place a stand and then place your vessel on top.
  • OTG is oven toaster and griller.
